Ireland

The republic of Ireland, a beautiful country and with a story very interesting, vikings, for instance :)

Dublin city

Dublin, the earliest reference to this city was described by Ptolemy in the year 140 and was called Eblana. But the city was build by the Vikings in 9t century and called Duibhlinn and means "Black pool" in Irish. Viking build a fortified place and nowaday, it's the Dublin Castle. During many years, Dublin was the theater of war.

Nowaday, Dublin is the capital of the Republic of Ireland. People at Dulin speak two languages, English and Irish, a celtic language.

During my vacation there, I was astonihed by the mood the night, in particular in the main streets, you will listen some musics groups and sometimes, the mood was very great, and I attracted by that mood and the people are good-living. It's one of my best memories there.

Gastronomy

Before starting your day, take an Irish breakfast. It's salt breakfast with a coffee or tea, with bread toasted, eggs, bacon and sausage.

I like the Irish food, if you go there, you can eat some recipes with stews, like Irish stew, or you can eat Fish and Chips, it's a speciality there. You can eat another speciality, the Colcannon, it's made with cabbage and potatoes.

Guiness beer is famous, and Irish people are very proud about it, I was astonished to see everywhere this brand, in all bars, restaurants :). Also, they cook with the guiness. I ate in some restaurants the Guiness Pie, or you can eat a dish with a Guiness bread, and I loved that :)

And for me, the best was Irish Coffee. It's a coffee with Irish whisky with cream or chantilly, but I prefer with chantilly) and it's very perfect for your end of your diner, or, when you have a little cold, that will warm you :) I drunk a variant, with Bailey's, but I prefer with Whisky :)

Restaurants

Davy Byrnes

The Davy Byrnes, for sure, it was my favorite restaurant there. I ate Irish stew or a guiness pie and it was very delicious.

The Bailey

I also ate at the Bailey, it's a cafe and bar. The mood was goot and the food too and not too expensive. If you go there, you can eat and listen some music in live with a local groups.

Discovering Dublin

Saint Patrick's Cathedral

It's a Roman Catholic cathedral and founded in 1191 and it's the biggest cathedral of Ireland. That Cathedreal was build near a holy well and dedicated for Saint Patrick.
During your visit in this Cathedral, you can see the Door of Reconciliation, where, in 1492, apperently the earls of Kildare and Ormond shook hands.

Christ Church Cathedral

The Christ Church Cathedral, it's another church in Dublin and it's the older cathedral at Dublin and founded in 11th century by the Viking king Sitric. Under the chuch, you have a big crypt from the 12th century and you can discover exhibitions.

If you are interested about the history of Dublin you have the museum Dublinia, near the Christ Church Cathedral. In this museum, you will discover the history of viking and medieval Dublin. Near the Christ Church Cathedral, you have the museum Dublinia,

Teeling Distillery

Teeling, was made and developped by Walter Teeling in 1782 in the heart of Dublin and until now, the Teeling distilly is always from the Teeling familly. The Teeling whisky is well-known for the innovation and the maturation of the whisky in the barrels in differents kind of woods provide a specific flavor in the whisky, and for sure, you will like it.

You can do a tour at the distillery of Teeling, you will learn what how to make the whisky, with the fermentation of each seeds, the distillation in the still and the maturation in barrels until the whisky will be put in the bottles for us.
